"My Struggle with Everyday Meals"

The world I live in now is very different from the one I was born and raised in. Moving from India to the US two years ago turned my life upside down. The comfort of having help all the time was a luxury,I truly appreciated only after coming here.


If you ask me whom I miss most in India, my answer is : my house help. :)


Initially, my mind kept comparing the best aspects of both worlds, making me realize that no place is perfect. While I enjoy many aspects of living in the US, the challenge of cooking fresh meals every day remains. However, humans have evolved and found solutions to problems in all situations, and I have found a solution to my problem too.


No, I’m not turning to frozen and ultra-processed foods which many choose to do.


Our lives are shaped by the choices we make, and I choose to create simple and easy recipes for my family that are aligned with ayurvedic principles, nutritious and tasty. These meals are easy to prepare yet balanced with the right mix of carbs, proteins, fiber, vitamins, and minerals and go well for all Ayurvedic body types.





So, here is one such recipe Veggie Lemon Rice. This recipe is made a lot in south india and when we add vegetables and sprouts to this it becomes a complete meal that you can savor in any season. If you replace rice with quinoa it can become a high protein-rich dish which is good for Kapha's body type. A Vata and Pitta body type people can enjoy it with rice.


Below are the things you need to create this veggie rice:


1 cup cooked Rice/Quinoa

1 cup chopped veggies(Carrot/Beans/Brocolli/Zucooni/Peas)

1 lemon squeezed

1/2 teaspoon Turmeric

1/2 teaspoon Cumin Seeds

1/2 Spoon Mustard Seeds

1/2 teaspoon brown sugar(Maple Syrup)

1 tablespoon Cashews

1 tablespoon moong dal

1 green chilli (Optional)

curry leaves
